Garbage Salad

One of my readers on Facebook called this “Garbage Salad” the other day and the name made me laugh.  So here it is.

At the end of the week I find myself with odds and ends of different fruits and veggies from my CSA.  Some good uses would be soup or a vegetable ragu, but if you live on the east coast, you’re well aware that it’s too dang hot outside to make soup or hot pasta.  So I chopped up everything I could find in the fridge, raided my pantry, and mixed up a quick honey balsamic vinaigrette.  As soon as I made the salad, I had to run outside and snap a picture because it was so pretty.  And then proceeded to inhale the bejeebers outta this thing.

There’s no recipe here…just a bit of inspiration.  Here’s what I put in it (if I can remember everything):

  • Salad greens
  • Raspberries
  • Diced Yellow Squash
  • Diced Zucchini
  • Diced Cucumber
  • Sliced Almonds
  • Diced Cheese
  • Cooked and Diced Turkey Bacon
  • Sunflower Seeds
  • Balsamic Vinaigrette (I mixed balsamic vinegar, olive oil, honey, salt & pepper)

This is by no means an all-inclusive list.  Add whatever else you have in the fridge, or take out what you don’t like.  Enjoy!

    This is how I cook. Salads are a mainstay for us and we by the end of the week we are calling them garbage salads too. :D Whatever is left that sounds like it would be good together is what we end up with and those turn out to be some of the best combinations. A lot of times the only protein left might be a can of black beans. Love that for variety too. Thanks for sharing yours on BeColorful.
