Menu Plan Monday 8/13

Being out of town last weekend really messed with my menu planning, so last week was a blur of chicken nuggets, pigs in a blanket, and breakfast for dinner.  Bad mommy.

This week is a new week, however, and there is a plan in place!  Tonight I’m putting together a dinner inspired by this week’s Extra Virgin episode, I’ll be making Weelicious’ “No Work Chicken”, and we’re also doing a taco night.

Monday: “Extra Virgin” Pasta
Tuesday: School carnival (so probably a quick dinner out)
Wednesday: Taco Night
Thursday: No Work Chicken
Friday: Going to visit family
Saturday: Beach
Sunday: Cheesy Salsa Tuna Burgers

Menu Plan Monday 7/23

As promised, I’m back on track with menu planning.  I went grocery shopping this weekend and bought just a few things.  I used Safeway’s new Just For U program and saved quite a bit more than I would have otherwise.  It was definitely worth the few minutes it took to go online add the savings to my card before I headed out.  (They didn’t pay me to say that, btw.)

This week we’re keeping it fairly easy.  I’m easing into cooking again, and will be making:

As for breakfast and lunch, I’m struggling a bit with these, but picked up some lettuce so I’ll probably make a few Garbage Salads for lunches.  I also spent a few dollars more and got some Eggland’s Best eggs.  I’m looking forward to seeing if they’re really worth those extra few dollars, or if I should keep getting my eggs for 99 cents/dozen at Walgreens.  Maybe I’ll do a veggie scramble to bring to work.

Menu Plan Monday 6/17

My first week back to menu planning after a brief hiatus and it’s gonna be a boring one.  I’m warning you.  Most nights this week, the boy and I are on our own so I’m not going to get fancy on ya.


Monday, my father-in-law is in town so we’ll probably order in pizza or something like that.
Tuesday, we’ll have leftover soup (chicken, rice, squash, and Swiss chard) that I made this weekend.
Wednesday, I’m thinking quesadillas.
Thursday, meatloaf muffins.
Friday, leftovers or Breakfast for Dinner.
Saturday, dinner out.
Sunday, maybe more soup or a stir-fry depending on what comes in the CSA

That’s our week, what’s yours look like?  Next week I plan to get back on the eMeals bandwagon. I loved having my meals planned for me, with a shopping list to boot.  (By the way, if you use the code DINNEREASY you get 15% off).

Another thing I really like about eMeals menu plan is that the recipes are so simple and quick.  Here’s an example of one of their Clean Eating meals that’s going on our plan for this week:

Chicken and Spinach Burgers
From eMeals


  • 2 cups fresh spinach
  • 2 garlic cloves, chopped
  • 1 1/2 lbs ground chicken
  • 1 Tbsp kosher salt
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • olive oil
  1. Combine spinach, garlic, ground chicken, salt, garlic powder, paprika and pepper.  Form into palm-sized patties.  Brush with olive oil.  Grill over medium heat for 7 minutes per side.

How’s that for an easy weeknight dinner?  They even give you a side dish suggestion of Broccoli and Carmelized Onion Salad (along with the ingredients and directions).

Menu Plan Monday 5/14

I didn’t get a chance to grocery shop this weekend so we’re gonna have to make do with what we have already.  I’m sure more creative folks could whip up something wonderful and exotic, but I’ll keep it simple.  My husband’s not home for two of the nights this week so it’s just me and the boy.

We’ll start the week with some Roasted Caprese Pasta with Basil Chicken (another eMeals recipe), then have leftovers the next night.
I also defrosted some ground turkey to make chili (and cornbread) for probably the last time until Fall.
Finally, I have a ton of tuna in the pantry so I’d like to make tuna melts.  When you make tuna, do you put relish in yours?  My husband started me with doing that and I absolutely love it.  I also use 1/2 Greek yogurt, 1/2 mayo to make it a little healthier.
The other nights will be leftovers, sandwiches, and BFD.
