CSA Friday 8/10

Since I was gone for several days, I didn’t get to do much CSA cooking so, sadly, I don’t have a recipe to share with you today.  But I do want to show you what we got this week.  I’m excited for the nectarines and potatoes most of all.  I’ve found our CSA potatoes have been so buttery and smooth.  They’re fantastic.

What I’m not so excited for, however, are more pattypan squash.  Thankfully there are only two this week but I’m getting a little sick of them.  Any recipe ideas?

    Want to trade some potatoes for the squash? I’m off potatoes these days but can eat sauteed squash 5 days a week. :)

    Or…have you tried like squash fritters? Egg, parm cheese, bread crumbs, corn (fresh from the cob!) and shredded squash. Pan fry in a bit of canola and yum!

    I got my boss’ CSA box today while they are on vacation. It looks similar, but with more nectarines and no squash! A couple weeks ago I stuffed larger patty pan squashes with a mixture of mushrooms, green bell peppers, cherry tomatoes, onions and some of the squash. I topped it with panko and mozzarella cheese. To hollow out the patty pan, bake for 15 minutes and then use a melon baller to scoop out the flesh. You could also dice them, saute them and use them in a vegetable quesadilla.
