As promised, I’m back on track with menu planning. I went grocery shopping this weekend and bought just a few things. I used Safeway’s new Just For U program and saved quite a bit more than I would have otherwise. It was definitely worth the few minutes it took to go online add the savings to my card before I headed out. (They didn’t pay me to say that, btw.)
This week we’re keeping it fairly easy. I’m easing into cooking again, and will be making:
- Coconut Chicken with Apricot Sauce
- Guacatuna Salad
- Breakfast for Dinner (eggs, potatoes from our CSA, bacon, fruit)
