Tastetastic Thursday 6/7

I’m so excited…I get to pick up my first CSA share tomorrow!  My farm posts a video showing what they’re packing in the shares, so it’s cool to see what’s going in there before bringing it home.  The only problem is that it messes up my running schedule because I have to go pick it up at lunchtime.
Running schedule, you ask?  Why yes.  Running.  Me! I’m in Week 5 of Couch to 5K and it’s going pretty well.  For someone who never MOVED before a month ago, I’m pretty impressed with myself.  Training will culminate in my first 5K at BlogHer in August.  Woot woot!
Ready for some features?  Here we go!

Black Bean, Jicama, and Grilled Corn Salad from In the Kitchen and On the Couch
A few weeks ago I tried jicama for the first time.  I wasn’t too sure about it at first, but as I ate more throughout the week, I realized how much I really liked it!  This recipe sounds like the perfect mix of crunchy and…mushy?  Not sure what the term is for the texture of beans.

Have you ever heard of such a thing???  When I told my husband I was featuring this recipe this week, he told me in no uncertain terms, “You need to feature it IN OUR HOUSE.”  LOL

    I’m so proud of you! CSA and running?!! Well done, sister!! As far as garlic scapes go – watch tomorrow on my blog. Kind of an incredible and simple recipe comin’ at ya! ;) As far as running goes – I’ve been trying to get up the urge to do exactly that. Right now I’m confined (and happy with) jillian michaels’ videos in my living room with a yoga mat. She scares the crap out of me but i also think she’s hilarious :) I’m proud of you!!!
