Tastetastic Thursday 4/5

Usually my husband has class late on Mondays so that’s what we call, “Special Mommy-Carter Night.”  We don’t really do anything special on those nights, but it’s nice to have the one-on-one time with my son.  Tonight, however, my husband has an event at school that he’s participating in, so we had an extra Special Mommy-Carter Night tonight.  Not only do I get alone time with Carter, but I get to catch up on my girly shows on the DVR.  Please tell me someone else out there watches Jerseylicious.  I know I can’t be alone.  Fess up!

Okay, enough inane rambling.  I have a full meal planned for you today.  Main course, side dish, and dessert.  Here ya go:

Raspberry Salmon Havarti Toast with Wild Greens

Love love love combining savory salmon and havarti with a bit of sweetness from the raspberry jam.  Not sure I’d be picking weeds from my front yard (if I had a front yard, that is) to put on top, but to each their own, right?
Asparagus and Mushroom Millet Pilaf from Cupcakes and Kale Chips
I have a newfound love for asparagus, and an oldfound love for mushrooms.  So why not combine them?  Love the addition of dried cranberries.  I’m all about the sweet/savory mix (see above).

I know.  I KNOW.  You’re squeeling, right?  So stinkin cute I can’t stand it.
