Menu Plan Monday 4/30

Kind of a laid back weekend around here.  My son was sick on Friday so we spent a lot of Saturday just hanging around the house letting him recuperate a little more.  It’s amazing how he got through most of the winter with nary a cold, and then once the end of March hit, he had strep back-to-back, allergies, a cold, and some sort of stomach bug.  All in about six weeks.

Then on Sunday we hosted a playdate at our house and spent the second part of the day (after naptime) just lounging and playing Transformers and watching tv.
So that was our weekend.  What did you do?
Here’s what I’m making this week:
  • Cracker Barrel Chicken Tenderloins (recipe to follow but here’s a sneak peek)
  • Clean Taco Salad
  • Whole Wheat Penne with Bacon, Tomato and Asparagus
