Menu Plan Monday 4/23
I am WAY under my grocery budget for this month, mainly because we’ve been eating a lot of what’s in our freezer and supplementing with little trips to the grocery store for produce and dairy. This week will be more of the same. I have some frozen chicken thighs, and leftover chicken breast from a lazy Sunday grocery store rotisserie chicken, so that’s guiding the plan for this week.
My boss gave me an enormous sweet potato so I’m planning on using the leftover chicken breast to make these BBQ Chicken Stuffed Sweet Potato Skins.

I’d also like to try these Honey Glazed Chicken Thighs that I’ve had pinned for a while.

One night we’ll do a Breakfast for Dinner night (I’m thinking Matzo Brei with the leftover Passover matzo) and then maybe a pizza night. The rest will be a Your On Your Own kind of thing where we’ll do leftovers, sandwiches, or whatever else we can throw together. I do have some frozen spaghetti that we can use (I make a big batch every few weeks…love homemade pasta!).

Good for you. Using up what you have on hand is always a good idea, and it certainly does save you money.
It also help to ensure that all that good stuff you buy gets used before its expiry date. Nothing worse than finding something in the cupboard that you can’t use because it’s too old.
