Honey Sauced Chicken

After a long weekend of food and family, I am exhausted.  The last thing I wanted to last night was to was to prep and cook, and I remembered this recipe from my linky party a few weeks ago.  I hopped onto Pinterest and found the recipe I’d pinned, thawed some chicken breasts, and I was ready to go.  Easy peasy dinner.

Honey Sauced Chicken
Ingredients:
  • 3 large boneless, skinless chicken breasts
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/8 cup chopped onion (or 1/16 cup onion flakes)
  • 1/8 cup ketchup
  • 1 Tbs. vegetable oil
  • 1 clove garlic, minced
Directions:
  1. Dice chicken and season both sides with salt and pepper.  Place in 8×8 pan. 
  2. Pour sauce over chicken and bake at 350 for 20 minutes, stirring after 10 minutes.
I served this with brown rice and veggies.  The sauce would make a good stir-fry sauce as well.  It was light and sweet and so good that my son actually FINISHED what was on his plate.
