After a long weekend of food and family, I am exhausted. The last thing I wanted to last night was to was to prep and cook, and I remembered this recipe from my linky party a few weeks ago. I hopped onto Pinterest and found the recipe I’d pinned, thawed some chicken breasts, and I was ready to go. Easy peasy dinner.
(Please excuse the horrible picture. I’d left my camera in the car and couldn’t muster the energy to get shoes on to go get it. Hence, the cell phone pic.)
- 3 large boneless, skinless chicken breasts
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/8 cup chopped onion (or 1/16 cup onion flakes)
- 1/8 cup ketchup
- 1 Tbs. vegetable oil
- 1 clove garlic, minced
- Dice chicken and season both sides with salt and pepper. Place in 8×8 pan.
- Pour sauce over chicken and bake at 350 for 20 minutes, stirring after 10 minutes.
